No Spending Months
The only event that we are doing is a snow-weekend trip that we are looking for the frugalist way to go and a present for Nicholas's Birthday. But I am hoping to get a great gift for him with all the Christmas specials still going on.
I have made a menu for the whole month of January and have purchased quite a bit from the shopping list. I plan on updating daily any "extra" spenditures and and "pay-off" that we make for the two months.

The ABCs of Flour
What makes a certain flour good for one recipe and bad for another? Gluten! When flour is moistened and mixed for dough or batter, gluten forms from the protein in the flour. Some flours have more protein, some less, forming more or less gluten, which is key to making breads expand and cakes stick together. For the best baking results, learn about these three basic types of flour:
- All-purpose flour is a blend of hard and soft wheat. The balance of gluten from these creates the texture you want for quick breads, pie crust, cookies and most everyday uses.
- Bread flour has a higher gluten-forming protein content, creating dough that is nice and elastic. This makes it ideal for making kneaded breads.
- Cake flour is made with soft wheat, producing less gluten, so your cake will have that perfect delicate and slightly crumbly texture. Note that self-rising cake flour is different.

Menu Plan Monday #1

So I am trying out posting a weekly menu for the rest of December in hopes of getting in the habit for our "savings month" of Jan and Feb. I am relying on old favorites as well as looking for new frugal recipies.
Monday: Leftovers, clean out fridge
Tuesday: Taco's @ Margaret's
Wednesday: Spaghetti, salad, bread sticks
Thursday: Grilled pork chops, veggie, peach cobbler
Friday: Beans and Cornbread
Saturday: Meatloaf, veggie, rolls
Sunday: Turkey, mashed potatoes, veggie, rolls
Breakfast is: cereal, oatmeal, grits, Orange Muffins
Lunch is: leftovers, sandwiches
snack is: apples w/ caramel dip (already made), carrot sticks w/ranch, various items in the house.

I get alot of recipes from Pioneer Woman and Tammy.
Credit Card Tally
Total debt:$7,814.16
I don't count car/house in this debt. I am hoping to knock out most of this debt by 2009. I know it is ambitious but here is my thinking:
5th paycheck Steve 4x in 2008 = $1200
Monthly $200 x 12 months = $2400
Total: $6,700
Now this does not include any overtime or extra jobs that Steve gets, plus any number of creative way we come up with to save money to go towards our debt.

Thanksgiving Aftermath
What could have killed me was the desserts.....apple pie, pumpkin pie, pecan pie, pineapple upside down cake and strawberry cheesecake. I had a piece of the cheesecake and a sliver (and I do mean a sliver) of pumpkin. Now that isn't to say that I didn't take slices of the other stuff for leftovers.
All in all I am proud of myself. So how did you do???

A Great Joke
The other day I went up to a local Christian bookstore and saw a "Honk If You Love Jesus" bumper sticker. I was feeling particularly sassy that day because I had just come from a thrilling choir performance, so I bought the sticker and put it on my bumper. Boy, I'm glad I did! What an uplifting experience followed! I was stopped at a red light at a busy intersection, just lost in thought about the Lord and how good He is. I didn't notice that the light had changed. It is a good thing someone else loves Jesus because if he hadn't honked, I'd never have noticed! I found that LOTS of people love Jesus! While I was sitting there, the guy behind started honking like crazy, and then he leaned out of his window and screamed, "For the love of GOD! GO! GO! GO!" What an exuberant cheerleader he was for Jesus! Everyone started honking! I just leaned out of my window and started waving and smiling at all these loving people. I even honked my horn a few times to share in the love! There must have been a man from Florida back there because I heard him yelling something about a "sunny beach". I saw another guy waving in a funny way with only one finger stuck up in the air. I asked my teenage grandson who was in the car with me what that meant, he said that it was probably a Hawaiian good luck sign or something. Well, I've never met anyone from Hawaii, so I leaned out the window and gave him the good luck sign back. A couple of the people were so caught up in the joy of the moment that they got out of their cars and started walking towards me. I bet they wanted to pray or ask what church I attended, but this is when I noticed the light had changed. So, I waved to all my sisters and brothers grinning, and drove on through the intersection. I noticed I was the only car that got through the intersection before the light changed again and I felt kind of sad that had to leave them after all the love we had shared, so I slowed the car down, leaned out of the window and gave them all the Hawaiian good luck sign one last time as I drove away. Praise the Lord for such wonderful folks!

Report Card
Nicholas got A's and B's and is doing much better. He now has tutoring twice a week to help give him a boost. Margaret says that homework with him is now a fifteen minute deal instead of the hour it was taking. He is able to concentrate so much better now.
ADHD
This year she seems to have a wide variance in her behavior. She can have a great day with no cards pulled and the very next pull 5 because of misbehavior. She has only pulled more than 3 cards one day this year, but her behavior is so unpredictable it has caused concern at home. I just had a parent-teacher conference and was told that Emilia had been overheard saying that she had pulled her patch off. The teacher checked over the course of the day and she did have it on, but it leads to the question of if she has been doing that. Since she takes it off herself, I haven't been tracking whether or not she had been keeping it on. We are going to her ped at the end of Nov. and will be discussing other medications with him. Nicholas was just diagnosed ADD and is on Vyvanse and it seems to be working well. I really like that they have different dose sizes. She has gotten old enough that I think she will do well with a pill, and we can be confidant that her day is with the medication instead of hoping.

Change on the Side
The ideal situation would be for me to get a position on night side here at the paper, but that could be a while....which is at least something to look forward to, I guess. I signed up for some kind of online survey which was recommended throught a blog that I read, but it just wanted me to sign up for more offers and led me through a maze to nothingness. Yikes!!!
I know some women/men out there have profitable at home positions...so I am not giving up yet.

Appalachian Trail
- I will need to get into a lot better shape. Some extra padding won't kill me, but the physical exertion of carrying it will be hard. I have started walking daily... and plan on doing dayhikes in the surrounding state parks.
- I will need to purchase the necessary equipment - I have been pricing around and it is going to cost me $700+ dollars for all the things I will need.
- I plan on taking smaller overnight trips in the foreseeable future.
- One of the trips I would like to do in the spring of next year is to hike the Bartram Trail. It is a 37 mile trail in Northern GA. It will take 3-4 days.
I am getting Emilia some backpacking gear and she will go with me on the smaller trips....It will be our special thing. I have found a hiking meet-up group here in Augusta and have joined it. I am hoping to go on some hiking trips with them. They mostly do day trips...but maybe I can meet a few people who would be interested in doing overnighters. I think the biggest problem we will have would be teaching her how to pee in the woods without getting her drawers wet. Ha, ha, ha I hope that she enjoys hiking....I think we will try it before buying her any special equipment.
Any of the long trips I will hope to find a female companion to go on it with and I know that it is not exactly ideal to go out in the woods alone, but we will see.

Camping
Saturday night we had BLT wedge salad, pork chops, and couscous for dinner. We generally agreed that the couscous would need a whole lot of seasonings should we ever eat it again. Margaret and Jeff came out Saturday night to join us. We had fun taking walks and hanging out with each other. We got the kids put to bed and stayed up for a while chatting.
Sunday morning we woke up and it was windy and cold. We ended up packing up and leaving early because it was so cold. Next time we will be more prepared...so we can stay a little later.
The worst part about camping this last weekend was the lake water was really far down. It was so bad that the yellow floaty things that mark of the swimming area were totally out of the water by several feet. But we want to go camping alot more often - and with time things will improve.

Journaling
Since my last post -
Steve's mother Barb past away, he is still trying to come to terms with it, but is taking it one step at a time. So in turn we have taken in her dog into the family. It is a white fluffy dog, unkown breed, male named Baby. So far it has been a welcome addition to the family. It can be a little hyper, but has been very helpful to wake up Emilia in the morning. We just call the dog on top of her bed and he starts to nuzzle her awake...much improved from last year's tourture sessions to get her morning started.
The kids have started school Nicholas (2nd grade) and Emilia (1st grade) each are having there own struggles this year. Nicholas seems to be having trouble learning and Emilia's is a behavior problem - mostly just being too active and hyper...trying to get her to calm down for school.
We went camping this last weekend. It was raining Friday night, was great Saturday and we woke up to a cool, windy Sunday. The lake was way down...so we didn't swim, we went for a couple walks, but mostly just hung out with Margaret, Jeff and Jordan who joined us Saturday afternoon til Sunday a.m.
I was forwarded this email about this woman who has gotten alot of attention from an ebay auction. Her blog address is mom2my6pack.blogspot.com she is hilarious. I wish that she lived closer, because I would love to meet this woman. She has 6 kids and the things they get into are hilarious, and make me appreciate mine. One off her kids she calls Spaz and he reminded me of Emilia so much I almost peed my pants. Well - I got to get back to work. I know that this blog jumped around on different topics, who knows maybe with time I will improve....maybe not.

Sickness
Nicholas has lost both of his bottom teeth and the permanant ones are coming in somewhat sideways.....he will need braces/orthodontist work. He has been having alot of bad dreams lately, the other night he woke up and said a dragon was chasing him. He also wasn't feeling very well this past week or so, and Margaret mentioned it is affecting his schoolwork. But he was feeling better on Sunday, so hopefully it has past whatever it was.
Steve is doing good working hard and so am I. We are hoping to get a new car soon - but the kind we want (Honda Pilot) is expensive even the used ones. So -- who knows what we will get, probably won't even start seriously looking until summertime.....

Managing Finances
I am glad to know that we don't have too much debt. Both our cars are paid off, we have a little on credit cards, and I always forget about Steve's student loan from Utah. I hope within two months to have the credit cards paid off and then start working on that student loan. Hopefully except for the house we can be debt free within a short while.
We are also trying a new thing where we are going to do all our shopping for the entire month of Feb. We will have walmart cards for gas and cards with $10 a week for Milk and fresh produce. Otherwise we are not shopping (we hope). I have found it is too easy to go into walmart for miilk, bread and eggs, and come out with $60 worth of groceries.
Pray for us that we can stand strong in our commitments.

Tastebuds
Now as a kid - I would have had pasta, sauce, meatballs and parmesean cheese.
But as an adult I have learned to add to it: spinach, bell peppers, green peas, onions, garlic, sausage, chicken.
I still don't like brocolli and I won't eat it on it's own as a side dish, but will eat it in a casserole. And at subway I add more than meat and cheese to the sandwich.
The fact that I try new things and my taste's are expanding give me hope for my children.
Both kids are pretty good eaters, Emilia eats most anything and Nicholas does too...although he has a "list" which can only consist of 5 things that he does not have to eat. Margaret implememted the "list" and I think it is a good idea. I know that he has taco soup, onions, broccoli and spicy food on the list. he used to have mashed potatoes on the list but he eats it now. Steve has now learned that if you want the kids to try a new food, you get Emilia to try it first, otherwise, if Nicholas doen't like it Emilia won't even try it. But if Emilia likes it you are more likely to get Nicholas to try it. Our new rule when we go to any buffet is that they have to try one bite of something new. Just this last Sunday Nicholas and I tried Macaroni and Cheese Soup. He like it, but secretly between you and I - YUCK!!!

Boston and Concord
This has all reminded me of a wonderful time in my childhood when my parents would take us to a park called "Boston and Concord" - or that is what I remember it being called. In the middle of the park was an island with a covered bridge leading to the island - the only way to get on it. They had a ship docked at the island that you could explore and I remember buildings that you could play in. Set up like the coloinal days. They also had a wooden thing in the square that people who were in trouble would be clamped into with their head and hands sticking through. I remember my parents sitting on a blanket at the front of the covered bridge, while we went throught and played on the island. It was such a fun place, but the best part is that we would go when we would pick up my (step) brothers and sisters. It must have been close to the place that they lived, because I don't ever remember going without them.
It is funny what we remember from when we were growing up.

I have felt for a long time that I wanted to communicate more with my family and friends but to email everyone that I want seemed like to tremendous of a task. So I am copying her idea of blogging...the wave of the future.
I hope that everyone would check back every so often and leave comments about their life. In this day and age we get so busy moving so fast that we forget to communicate with the ones we love, but don't live with. I hope to bridge the unseen gap between me and my family members/friend.
