I am a 31 year old working mom. I have two children ages 6 & 8. I am newly remarried (two years and counting) and enjoy spending time with the hubs! Even though life is busy I try to take a little time to show what is going on in my world. This blog is mainly for daily happenings, finances and such. Portable Foods


Kimberly over at the Nourishing Gourmet had a Portable food chalange to see what creative ideas we can come up with to include in our packed lunches. I always find it difficult to come up with appetizing, inexpensive ideas and I am looking forward to seeing what everyone comes up with. I want to utilize this weekend to come up with something new for my daughter's lunches.
My husband and I tend to go the left-over route, after dinner packing up what is left to be lunches for the next day. My daughter is the one that I am looking for ideas for. She tends to not eat much at lunch so her lunches of late have been either lunchables (found a great sale) or half of a peanut butter sandwich, a handful of nuts and a treat. I find that packing a lunch that does not spoil works best, so if she does not eat everything at lunch she can snack on what is left after school. I like to buy canned fruit(in water or light syrup) dice it up and put it in portable containers.
My sister had a great idea of deli roll-ups - a slice of meat and cheese rolled up and harpooned with a toothpick. She also has packed white rice with a packet of soy sauce for the one who loves rice.
